We had a terrific waiter. Enjoyed the red sangria tremedously. Recommended tapas include the octopus, the picillo peppers stuffed with manchego cheese and mushrooms, and the insanely delicious and inventive lobster with molecular pineapple. The one I'd probably skip is the homeade chorizo on garlic mashed potatoes. My piece of sausage contained a large chunk of what I can only assume, Julian Serrano being an authentic Spanish restaurant, was the foreskin of the bull that lost the fight.
I'm often a singleton visitor to Vegas, so I'm naturally drawn to bar seating. Serrano's bar seating is excellent, with many of the bar seats overlooking food prep stations. On my last visit I was near the Oyster prep station and a salad prep station. It was neat to talk to the staff and watch professional cooks prepare the food going out to the rest of the restaurant.The Tapas / Small plate theme also works well for the single diner. Because the plates are small, you can comfortably have three or four plates easily and not be completely full. (Disclaimer, I went totally gluttonous and I think I ate six by myself.) The net effect though, is that it's somewhat like 'build your own tasting menu' which is a lot of damnned fun. The wine selection was also good, full of Spanish reds that match the food perfectly.It's worth a stop. All of the plates I had were tasty and excellently prepared. I had fun just by myself. I imagine a large party of 6 would have a complete culinary blast.
The tapas and paella Valenciana are truly amazing, and the Cereza Borracha martinis are excellent too.
As another noted, this place is great if you are alone in Vegas. You can sit at the bar and watch the chef make food and it seems like everyone wants to include you in what is going on. If you are eating alone, you may want to avoid the Pan Tomate (tomato bread) because it's three big slices. Real hard to finish that plus other nuggets on the menu. I suggest the Albondigas (meatballs). Just four of these things really hit the spot. The wines are also relatively affordable. I really really liked this place.
