A fantastic take on American cuisine from from renowned Chef Charlie Palmer. Between the the dry-aged steaks and the amazing vertical wine cellar, Aureole is one of those Vegas 'musts.'

Having seen Aureole on many a TV show, I enjoyed seeing the famous wine tower in person, but I wasn't overwhelmed by the food. It was good, but not spectacular, though to be fair having just had dinner at Joel Robuchon the night before it would've been hard for even the best restaurant to not seem banal in comparison, so it probably wasn't Aureole's fault, and it was good enough that I would definitely eat there again, as it probably would've shone brighter if it wasn't taking the stage the night after a meal as stellar as the one we'd had the night before.
Also, the service was good and the room itself, particularly the wine tower, is something to see...
