Stripsteak is - you guessed it - a steakhouse. What you might not have known is that it is the first steakhouse from celebrity chef Michael Mina whose eponymous restaurant at Bellagio is one of the top dining attractions in all of Las Vegas. Expect the unexpected.

I'm sure the founding fathers of Las Vegas would have never imagined it would one day contain a steakhouse every 100 yards. Not only does Sin City have a gluttony of steakhouses, they are world class. Stripsteak at Mandalay has quickly turned into one of my favorites because of the small touches that set it apart from mere beef on a plate.Many know the name Michael Mina, and I'm sure he could skate by on name alone, but I think Stripsteak has some very unique aspects that really bring it to the front of the Las Vegas steak game. The star of the show is of course the cattle. Mina uses the sous vide method of cooking steak to perfection. This method uses beef, placed in a vacuumed sealed bag cooked in an immersion bath. It sounds strange, but it allows the steak to be cooked to exactly the temperature desired and it can be held for a long time at that temperature, so it's never overcooked. The steaks are finished in a searing wood burning oven that puts an amazing char to the outside of the perfectly cooked interior. They main dishes are complimented by a batch of duck fat fries served with a trio of dipping sauces. This restaurant alone would earn four stars from these fries. Honestly the single best french fries I've ever consumed. They are perfectly blanched and double fried. Crispy on the outside, a rich potato flavor on the inside. The dipping sauces could be served in a shot glass and drank straight. An amazing group of condiments to soak the fries in.Finally, I will add in the reason I think this is one of the best steakhouses in Vegas. Stripsteak accepts restaurant.com coupons. I know some may see it as tacky to give a coupon at a classy steakhouse, but rest assured the management/wait staff doesn't make you feel like a cheapskate. Instead they accept it with smiling faces and still bring top notch service. For the value, it would be tough to beat in this town.P.S. On our last trip we slipped the waitress a $20 and asked if we could get into the foundation room on the top floor of Mandalay Bay. The waitress had the manager walk us up to the elevator, and we had a great evening. This place is definitely a don't miss.

The amuse fries were good but, again, truffles aren't my thing so the truffled fries with truffle aoili did not speak to me, and the herb & garlic fries with ketchup were ... hmm, well-executed? It was the gremolata behind door #3 that disappeared from our plates very quickly.

Appetizers have been consistently excellent. There's enough variety in the menu to find a favorite old or new. Red chili cucumbers and _polenta_ croutons added zing to what might have otherwise been a merely serviceable wedge salad; the "caesar salad" comes with thin slivers of anchovy filets, a classic taste in an artful presentation.

Sous vide means your steak will be cooked perfectly. PERFECTLY. Of the four steaks I've sampled here, all have been excellently prepared. They don't come laced with strong sauces, mustards, or cheeses because they don't need to be. The filet was exquisitely tender, as it should be; the skirt steak tasted, well, like skirt steak (this isn't a hanger cut!); and both the bone-in and wagyu rib-eyes were wonderfully flavorful. Side dishes complement the main course well without being dominating: truffled mac n cheese is trendy at the moment and well-executed but not for my palate, but the potato puree trio strong without being overbearing and the scalloped potatoes were divine.

At this point I'm expecting Vegas steakhouse service to be excellent, so it's difficult for me to compare. Seating was comfortable, and reservations not too difficult.

Pretty good. Split a shellfish platter with the wife for an app and then dug into a nice dry aged bone-in ribeye while the wife had a Kobe filet which she said was really good. The service was good & overall I'd recommend it.
