When you have earned 25 Michelin stars, and have won every culinary award in the pantry, it has to be difficult to figure out where to go next. Joel Robuchon's decision, after disappearing from the culinary universe for a few years, was to reimagine fine dining. Instead of heaping luxury on top of luxury, Robuchon borrowed the form of a sushi bar as a tool to refocus the diner on the food. l'Atelier (French for "studio") is a quiet, almost Zen experience in the midst of the bustle of the MGM Grand. The hush of the restaurant doesn't mask the intensity of the artists working in the kitchen, where painstaking efforts are taken to coax the very best from premium ingredients.

Skip the alacarte menu, and go for the Degustation. Pay special attention to the easily overlooked pommes puree (aka mashed potatoes) that come with most of the main entrees. Robuchon made his culinary reputation on perfecting this sometimes mundane dish. His pommes puree is made by cooking, then drying the cooked potatoes, then basically replacing all that moisture with that magic French ingredient: butter. And lots of it. The potatoes are intensely rich, almost to the point of becoming a sauce instead of a side dish. You don't need a lot, but they are amazingly delicious. It's a real credit to Robuchon's deep thinking about food that he can achieve these kinds of heights with some decidedly non-glam ingredients.

Outside of all this high-mindedness, it's also just plain fun to watch the wait staff try to keep the vegetable and mozzerella vertical salads from falling over on the way to the table.

The problem with Vegas is every hotel has a award winning chef and a world class restaurant. Or so they tell you. L'atelier is one of the only fine dining places on the strip that actually puts their money where their mouth is.

Screw a la carte. When you come to a place like this, you gotta go all out. Get the Discovery menu. 10 courses of deliciousness. When the courses first get to your table, you may think "this is a bit small", but you'll discover that it's actually "just enough". There was such a variety of tastes and textures that the entire meal was an experience. After setting the food down in front of each diner, the waiter did an excellent job of explaining what the dish was. He even stuck around for a second or two to make sure we didn't have any questions.

After finishing the last course, I wasn't stuffed, but very content. I would gladly come back to this place. Money well spent.

When patrons are neither entering or leaving, they close the sliding glass doors at the entrance. This keeps any extra casino noise from creeping in and ruining the ambiance of the place.

If you can, I would suggest sitting at the bar so that you can observe them preparing/platting your next course. It's a rare treat to be able to see deliciousness being constructed.
